Fluorophos ALP Test System
   
Rapid Pasteurisation Verification
The Advanced Instruments Fluorophos ALP Test System takes the phosphatase test for pasteurisation verification to its highest level by yielding quantitative results, eliminating subjective interpretation. 
The Fluorophos ALP Test maximizes production efficiency by serving as an early warning system for processing malfunctions, thereby reducing routine maintenance.
By tracking ALP results, it is possible to determine when maintenance is necessary and improve the integrity of the processing system. The test has been approved by the International Standards Organisation (ISO11816-1), IDF, Interstate Milk Shippers and AOAC. It is the reference test in the UK.
It is more sensitive, reproducible and quicker than older methods. The instrument interprets the results instead of a technician, improving accuracy and dramatically reducing the evaluation process from 90 minutes to 3 minutes. It is capable of measuring down to 0.003% raw milk, or about 30 times lower than the old technology.

Assay  Alkaline Phosphatase Detection
Pasteurisation is one of the most important steps in processing milk and dairy products and is essential for food safety. An enzyme in milk, Alkaline Phosphatase (ALP), is inactivated at slightly higher temperature and time conditions that those required to kill milk-born pathogens. The Fluorophos Assay detects the amount of ALP left after pasteurisation. If the pasteuriser deteriorates, fails or for some other reason raw milk enters pasteurised milk, the Fluorophos Assay will detect a contamination of as little as 0.003% raw milk.

Performance Trends
The great benefit of using the Fluorophos Assay is the opportunity to monitor the trends in pasteuriser performance. A gradual deterioration in performance can be discovered and suitably treated well in advance of a legal failure due to the high sensitivity of the test. This could save costly production downtime because of unplanned maintenance.
The Fluorophos test is based on the same chemistry used in traditional colorimetric tests for pasteurisation verification, but involves the liberation of a chemical measured by fluorescence rather than colour.

The Assay Method
The Advanced Instruments fluorometric assay for ALP uses a specially designed enzyme substrate called Fluorophos. Fluorophos, a non-fluorescent aromatic monophosphoric ester substrate (2'[2-benzothiiazole phosphate) reacts with ALP to make a highly fluorescent product that is measured in a fluorimeter over three minutes. This direct kinetic assay provides a greatly increased sensitivity to ALP activity and the test system can detect levels of raw milk in pasteurised milk down to 0.003%.
